The Passion Honey Processing Method
Developed by the owner of Finca El Mango in collaboration with the Linking coffee team, is an advanced evolution of the traditional black honey process. By extending the drying time and carefully controlling humidity, temperature, and airflow within a specially constructed shaded drying shed, this method enhances fruit flavours while managing the risks of microbial contamination. The process requires meticulous daily manual turning and removal of defective beans to ensure optimal moisture levels for natural yeast activity. This extended, low-temperature drying allows pectin to deeply infuse the beans, resulting in pronounced tropical fruit notes. In 2019, coffee processed this way earned fifth place and the 2nd highest bidder at the Excellence Cup, marking a significant achievement.
