Finca La Luisa utilises a unique fruit-infused fermentation process to produce distinct coffee flavours. This involves a double fermentation, first in a stainless-steel tank with CO2 to create an anoxic environment, then after pulping, with the addition of fruit juice like peach, lychee, or strawberry. This process, combined with the honey method (drying with mucilage), results in complex and flavourful coffees.
