The Root Journey
We started our root journey in May 2025, with a simple goal: to deepen our connection to the land and curate truly distinctive beans for our guests. It led us first to Finca de Berman in West Java, Indonesia, where we selected an exquisite micro-lot of only 350kg. Through the traditional honey process—where the coffee fruit is depulped and dried on raised beds, retaining the mucilage’s natural sugars—this lot achieves remarkable sweetness and a fuller body.
The journey then took us to Carmo Coffees in Brazil, a family-run farm stewarded across three generations. We have been sourcing the celebrated Yellow Bourbon from Minas Gerais from them, and this time, we sought out their newly cultivated, rare varieties—aiming to introduce these exceptional beans to Hong Kong.
Every step of this journey is driven by a singular dedication: to bring you coffee that is not only of the highest quality, but also tells a unique story from soil to cup.
