The Roasting Process: Precision and Passion

Once the beans arrive, the real magic begins. Roasting is the pivotal stage where green  beans metamorphose into the dark brown gems that brew into your daily coffee. This  process is not merely about heating but balancing temperature and time to coax out  the beans’ fullest flavour potential.

           Drying: The beans, containing about 10-12% moisture, are gently dried to prepare  for roasting.

           Roasting: The temperature rises, initiating complex chemical reactions that  develop the beans’ colour and aroma. This is where the prized 'Maillard reaction'  occurs, producing the coffee’s distinctive flavours.

           Cooling: To lock in all the depth and aroma, the beans are rapidly cooled, halting  the roasting process at the perfect moment.
